The Best Eggs

There is a lot of talk about what the right foods to eat are, in light of recent disease outbreaks and concerns over the environment. Some foods (like tomatoes) that are homegrown and organic are clearly superior to store-bought. They have richer colors and deeper flavors. As a rule of thumb, I trust that the vegan, organic, locally-farmed food is tastier than other options. But then there are certain foods that I really couldn’t tell you one way or the other, over taste.

This article at Food Lab did a really great job testing foodies to see if they really could tell the difference between the best eggs and the regular eggs (derived from sad, abused, poorly nourished chickens) that most of us buy. Guess what? They couldn’t. Eggs, although extremely versatile, are not on the top of anyone’s favorite food list. There are many, many wonderful dishes which contain eggs, but when is the last time anyone’s ever been in the mood for a plain, hard-boiled egg?
